## Filleting into Three Pieces (Sanmai Oroshi)
  1. Remove the Scales: Use the tip of the knife to carefully scrape off the scales of the Heda sea bream, then rinse with water.

  2. Remove the Head and Internal Organs: Hold the head of the fish with your left hand, placing its back facing you. Make incisions at the base of both belly fins with the knife, then proceed cutting from the right side of the pectoral fin toward the base of the head. Insert the blade without cutting into the internal organs, proceed along the backbone, and cut the flesh around the head using the backbone as an axis.

Preservation Method

  1. Wipe Off Moisture: After filleting into three pieces, thoroughly wipe off moisture from the flesh using kitchen paper.

  2. Refrigerated Storage: Store the fillets in the refrigerator. The storage period depends on the fish type, thickness, temperature, and hygiene conditions; as a guideline, it is recommended to consume within 1–2 days.
