Sea bream was kombu-jime cured for three days and compared with regular sea bream based on actual results at home.
In this trial, there was a significant difference between sea bream wrapped in kombu and sea bream without it. The sea bream without aging had a light taste, whereas the kombu-wrapped and aged sea bream had a rich flavor lingering even after swallowing.
However, after three days, many parts of the flesh became dry and flaky, and the kombu flavor became too strong. In other words, kombu-jime is not better the longer it lasts. Under our home conditions, about one day is the better balance for taste and texture.
Reasons for Flavor Differences
- Contact with kombu: The kombu was in firm contact with the sea bream block, likely transferring umami.
- Moisture changes: Aging caused excess moisture to escape, concentrating the flavor.
- Time factor: After three days, too much moisture was lost, making dryness more noticeable than richness.
Procedure
- Prepare kombu: Lightly wipe kombu and cut it to be slightly larger than the sea bream fillet.
- Prepare salt: Measure an appropriate amount of salt.
- Kombu-jime: Lightly salt the sea bream fillet and wrap it with kombu.
- Refrigerate: Start with short durations; in this trial, about one day was used as a guideline.
- Remove and finish: Remove the kombu, slice the sea bream thinly, and serve.
Points of Caution
- Kombu contact: Make sure kombu touches the entire sea bream surface evenly.
- Storage conditions: Ideal refrigerator temperature is 0–4°C with 80–90% humidity.
- Freshness of sea bream: Use very fresh sea bream.
Pre-service Checks
- Hygiene control: Thorough hand washing and utensil sterilization when handling raw fish.
- Storage condition verification: Ensure refrigerator temperature and humidity are appropriate.
Summary
Under these conditions, sea bream without kombu-jime tasted light, and kombu-jime sea bream had a distinctly richer flavor profile through to the aftertaste. However, after three days, the flesh dried out and the kombu flavor became excessive. Therefore, adjusting starting at about one day is easier for home preparation.
Next Checks
- Kombu quality: Confirm that the kombu used is high quality.
- Refrigerator status: Recheck refrigerator temperature and humidity settings.
