The main purpose of applying salt to tuna and wrapping it with paper is to remove excess moisture and improve the aroma and texture of the flesh.
This process is not intended to safely extend the storage time nor to fully prevent food poisoning bacteria or histamine formation.
What Changes Occur
Tuna with a lot of surface moisture can taste diluted and feel crumbly when sliced. By lightly salting and letting it sit briefly, then wiping off moisture with paper, the flavor becomes more concentrated, and the surface texture becomes easier to handle.
If the salt is applied too heavily, the flesh tightens and the saltiness becomes dominant, so initially apply only a very thin layer.
My Impression After Letting it Sit for Half a Day
I sprinkled salt on sashimi-grade tuna, wrapped it in kitchen paper, and refrigerated it for half a day. The moisture was appropriately drawn out, flavor intensified with increased umami, and eating it felt like a completely different experience.
This result depends on the specific tuna, amount of salt, paper condition, and refrigeration environment during this trial. Since salt and paper treatment does not extend the expiration date, always confirm sashimi-grade labeling, expiration dates, and maintain low-temperature control separately.
Basic Procedure
- Press kitchen paper on the surface to absorb moisture
- Lightly sprinkle a very thin layer of salt
- Let sit for a short time
- Wipe off exuded moisture with fresh paper
- Place in container and refrigerate immediately
Time varies depending on the fish condition; instead of fixed times, check surface moisture and saltiness.
Separate from Histamine Control
Histamine forms when fish temperature management is poor and cannot be broken down by typical cooking once formed. Do not assume salt and paper treatment makes it safe from histamine.
Summary
Salt plus paper helps refine the taste and ease of cutting tuna. Prioritize expiration dates, time after purchase, and low-temperature management, and consider quality adjustment and safety measures as separate steps.
